Yeasty Boyz comes off the counter. Dough is mixed by hand — flour, water, salt, and whatever the week calls for.
Wait, then wait more
Bulk ferment, then a long cold proof so the crumb opens and the crust sings. Sourdough bread takes two days — there is no shortcut.
Fire & pickup
Into a ripping-hot oven on day two. You pick up in Picayune, still a little warm if you come when we pull the loaves.
Our story
Randy Carollo learned kitchens the way some men learn rivers. Angelina wanted in from the time she could stand on a stool. The one that matters most is the one they share.
